1. Layer parfaits in 2 wine or dessert glasses, beginning with 1 scoop lemon
sorbet in each glass, followed by 1 tablespoon lemon curd, 2 tablespoons
frozen raspberries and 1 scoop raspberry sorbet. Freeze until ready to
serve.
2. Just before serving, top each parfait with 1 tablespoon whipped topping,5
fresh raspberries and a mint sprig, if desired.
