Pasta with Grilled Pork, Scallions and Cucumber

Recipe Ingredients

1 lb 454g / 16ozMostaccioli, Ziti or other medium pasta - uncooked
1 lb 454g / 16ozPork loin - trimmed of fat, cut
1 lb 454g / 16ozCucumber - sliced (large)
1   Scallions - trimmed
  Sauce
1/4 cup 59mlLight soy sauce
2/3 cup 157mlOrange marmalade
1/2 cup 73g / 2.6ozFresh mint - chopped

Recipe Instructions

Prepare pasta according to package directions; drain. Thread the pork and cucumbers onto separate skewers. In a large mixing bowl, stir together all the ingredients for the sauce.

Over medium-hot coals, grill the pork until firm (about 8-10 minutes) and the cucumber until tender and nicely browned (about 6 minutes). Slide the pork and cucumbers off the skewers and toss in a large bowl with the sauce.

Grill the scallions until wilted, about 3 minutes. Cut scallions into 1-inch lengths and toss with pork mixture. Toss in the pasta, garnish with mint leaves and serve.
