Pea Greens Salad

Recipe Ingredients

1 cup 198g / 7ozSugar snap peas
1/2 cup 118mlSnow peas
1/2 cup 118mlFresh or thawed frozen green peas
2 tablespoons 30mlLemon juice
1/2 teaspoon 2.5mlSugar
1/2 teaspoon 2.5mlSalt
1/4 cup 59mlVegetable oil
1 cup 237mlSliced radishes
6 cups 1422mlPea greens
3 tablespoons 45mlChopped mint

Recipe Instructions

In a kettle of boiling salted water cook sugar snap peas 2 minutes. Add snow and green peas and cook 1 minute. Drain peas in a colander and rinse in cold water. Pat dry on paper towels.

In a small bowl whisk together lemon juice, sugar, salt and oil until sugar is dissolved. In a larger bowl toss all peas with dressing and radishes.

Line a serving platter with pea greens, and spoon salad onto plate. Sprinkle with chopped mint.

This recipe yields 4 servings.
