Thai Style Beef Salad

Grill the beef and allowed it to cool slightly before being tossed with the mixed greens. You can grill the beef well in advance, but plan on using it soon -- refrigeration will dry it out and make it tough. The meat is best grilled rare, but you can cook it to the exact degree of doneness you prefer.

Recipe Ingredients

2 lbs 908g / 32ozSirloin
  Marinade
1/2 cup 118mlOil
2 tablespoons 30mlSesame oil
1 tablespoon 15mlGranulated garlic
2 tablespoons 30mlSoy sauce
2 tablespoons 30mlRice vinegar
1 tablespoon 15mlFreshly-ground black pepper
1 teaspoon 5mlDried ginger powder
1 teaspoon 5mlGround coriander
1 teaspoon 5mlBasil
1 teaspoon 5mlDried mint - if available

Recipe Instructions

Pound the sirloin into an even thickness of about 1/2- to 3/4-inch then cut into 1-inch strips. Toss into the marinade. Place in a Ziplock bag for at least 2 hours before cooking.

For the Salad: Plan on using one handful of greens per person for a first course and two for an entree salad. You can use mesclun mix, a blend of various young lettuces, arugula, and other greens, available in most markets, which have been washed and are ready to use. Other items that work well with this mix are fresh bean spouts, shredded carrots, shredded green onions and crushed peanuts. Be sure to add fresh basil, and even mint, if you can find it. Create your own favorite mix

Cooking the Beef: Preheat your grill on its highest setting for 5 minutes. Cut the marinated beef into 1/4-inch strips, place on the hot grill, and cook over high heat for 3 to 4 minutes, tossing occasionally. When the meat has reached your desired state of doneness, remove it from the grill.

Taste a piece to see if it is cooked to your liking. Allow it to cool slightly before using, so it doesn't wilt the greens. When serving, toss everything together in the dressing. Put onto plates, garnish with crushed peanuts and finely shredded carrots and serve.
