Spiced Bananas With Rum Sauce Recipe - Cooking Index
2 cups | 474ml | Ripe bananas (small) |
1 tablespoon | 15ml | Margarine |
1 tablespoon | 15ml | Brown sugar |
2 tablespoons | 30ml | Apple juice concentrate - thawed |
1 teaspoon | 5ml | Vanilla extract |
1/4 teaspoon | 1.3ml | Ground cinnamon |
1/8 teaspoon | 0.6ml | Ground allspice |
2 tablespoons | 30ml | Dark rum |
1 cup | 237ml | Vanilla reduced-fat frozen yogurt |
Garnish: fresh mint sprigs |
Cut bananas in half crosswise, and cut halves lengthwise. Melt margarine in a large nonstick skillet over medium-high heat. Add brown sugar and next 4 ingredients; cook 30 seconds. Add banana pieces, and cook 1 minute on each side.
Heat rum in a small saucepan. Pour over banana mixture. Ignite rum with a long match, if desired; let flames die down. Stir gently. Top each serving with frozen yogurt, and garnish, if desired. Serve immediately.
Makes 2 servings.
Notes: Flaming desserts are a dazzling finale. Heat the rum just until it produces fumes. Pour over the dish; then step back and light with a long match. Rather than transporting the flaming dessert to the table, play it safe and flame tableside.
