Sliced Tomatoes And Mozzarella With Three Herb Pesto

Recipe Ingredients

2   Vine ripened tomatoes - (abt 1 lb) (large)
1/2 lb 227g / 8ozMozzarella cheese, preferably fresh - sliced 1/4" thick
1/3 cup 78mlThree Herb Pesto - see * Note
  Freshly-ground black pepper - to taste
  Basil, mint, and/or parsley sprigs - for garnish

Recipe Instructions

* Note: See the "Three Herb Pesto" recipe which is included in this collection.

On a large round platter alternate tomato and mozzarella slices, overlapping slightly, and spoon Three Herb Pesto in a ring around center of slices. Sprinkle with pepper and garnish with herbs.

This recipe yields 4 servings.
